Ingredients

  • Penne Pasta - 12 oz
  • Kale - 4 cups chopped
  • Onion - 1 large, thinly sliced
  • Olive Oil - 3 tbsp
  • Garlic - 2 cloves, minced
  • Red Pepper Flakes - 1/4 tsp
  • Salt - 1/2 tsp
  • Black Pepper - 1/4 tsp
  • Parmesan Cheese - 1/4 cup, grated

Instructions

  1. Cook penne pasta according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onions and cook until caramelized.
  3. Add garlic, red pepper flakes, salt, and black pepper to the skillet. Stir for 1-2 minutes.
  4. Add chopped kale to the skillet and cook until wilted.
  5. Add the cooked penne pasta to the skillet and toss to combine.
  6. Serve hot, garnished with grated Parmesan cheese.
