Ingredients
- Penne Pasta - 12 oz
- Kale - 4 cups chopped
- Onion - 1 large, thinly sliced
- Olive Oil - 3 tbsp
- Garlic - 2 cloves, minced
- Red Pepper Flakes - 1/4 tsp
- Salt - 1/2 tsp
- Black Pepper - 1/4 tsp
- Parmesan Cheese - 1/4 cup, grated
Instructions
- Cook penne pasta according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onions and cook until caramelized.
- Add garlic, red pepper flakes, salt, and black pepper to the skillet. Stir for 1-2 minutes.
- Add chopped kale to the skillet and cook until wilted.
- Add the cooked penne pasta to the skillet and toss to combine.
- Serve hot, garnished with grated Parmesan cheese.
