Ingredients

  • no-salt-added water-packed tuna - 1 5-ounce can
  • celery - 1 small stalk
  • jarred roasted red pepper - 2 tablespoons chopped
  • scallion - 1 minced
  • plain Greek yogurt - 3 tablespoons
  • Dijon mustard - 1 teaspoon
  • ground pepper - ΒΌ teaspoon
  • mayonnaise or softened butter - 4 teaspoons
  • whole-grain bread - 4 slices
  • sharp Cheddar cheese - 2 slices

Instructions

  1. Stir tuna, celery, roasted red pepper, scallion, yogurt, mustard and pepper together in a medium bowl until well blended.
  2. Spread 1 teaspoon mayonnaise (or butter) on one side of each slice of bread.
  3. Flip 2 of the slices and top each with half of the tuna mixture, 1 slice cheese and another slice of bread, mayonnaise-side up.
  4. Heat a large skillet over medium heat.
  5. Place the sandwiches in the pan and cook, turning once, until the cheese is melted and the bread is golden, 3 to 5 minutes per side.
  6. Serve immediately.
