Ingredients

  • Beef bones - 3
  • Onion - 1 large, sliced
  • Ginger - 3 thumbs, sliced
  • Star anise - 4 whole
  • Cinnamon stick - 1
  • Cloves - 3
  • Cardamom pods - 3
  • Water - 4 quarts
  • Fish sauce - 1/4 cup
  • Rock sugar - 1 ounce
  • Salt - 2 tablespoons
  • Rice noodles - 1 pound
  • Beef sirloin - 1/2 pound, thinly sliced
  • Green onion - 2 stalks, sliced
  • Bean sprouts - 1 cup
  • Thai basil - 1 cup
  • Lime - 1
  • Fresh mint leaves - 1/2 cup
  • Red chilies - 2 sliced
  • Hoisin sauce - for serving
  • Sriracha sauce - for serving

Instructions

  1. In a large pot, char onion and ginger on an open flame or in the oven.
  2. Toast star anise, cinnamon stick, cloves, and cardamom in the pot until fragrant.
  3. Add water, beef bones, fish sauce, rock sugar, and salt. Simmer for at least 1 hour.
  4. Cook rice noodles according to package instructions, then divide into bowls.
  5. Top noodles with raw beef slices, green onions, and bean sprouts.
  6. Pour hot broth over the beef to cook it.
  7. Garnish with Thai basil, lime, mint leaves, red chilies, hoisin sauce, and sriracha.
