Ingredients

  • Salsa Verde - 1/4 cup
  • Fresh Lime Juice - 2 Tbsp.
  • Extra Virgin Olive Oil - 2 Tbsp.
  • Hass Avocados - 3
  • Medium Tomatoes - 2
  • English Cucumber - 1
  • Green Onions - 3
  • Kosher Salt - 1/2 tsp.
  • Fresh Cilantro - 1/2 cup
  • Ground Black Pepper -

Instructions

  1. In a medium bowl, whisk together the salsa verde and 1 tablespoon of lime juice. Whisking constantly, stream in the oil until well combined.
  2. In a large bowl, toss together the avocado and the remaining 1 tablespoon of lime juice. Fold in the tomato, cucumber, green onion, and salt. Fold in the cilantro and the dressing. Add salt and pepper to taste.
