Ingredients
- Salsa Verde - 1/4 cup
- Fresh Lime Juice - 2 Tbsp.
- Extra Virgin Olive Oil - 2 Tbsp.
- Hass Avocados - 3
- Medium Tomatoes - 2
- English Cucumber - 1
- Green Onions - 3
- Kosher Salt - 1/2 tsp.
- Fresh Cilantro - 1/2 cup
- Ground Black Pepper -
Instructions
- In a medium bowl, whisk together the salsa verde and 1 tablespoon of lime juice. Whisking constantly, stream in the oil until well combined.
- In a large bowl, toss together the avocado and the remaining 1 tablespoon of lime juice. Fold in the tomato, cucumber, green onion, and salt. Fold in the cilantro and the dressing. Add salt and pepper to taste.
