Ingredients

  • Shrimp - 1 pound
  • Lime Juice - 1/4 cup
  • Orange Juice - 1/4 cup
  • Olive Oil - 2 tablespoons
  • Honey - 1 tablespoon
  • Avocado - 2 ripe, diced
  • Mixed Greens - 6 cups
  • Red Onion - 1/4 cup sliced
  • Cilantro - 1/4 cup chopped

Instructions

  1. In a bowl, whisk together lime juice, orange juice, olive oil, and honey.
  2. Toss the shrimp in half of the dressing and let it marinate for 20 minutes.
  3. Heat a skillet over medium-high heat and cook the shrimp until pink and cooked through.
  4. In a large bowl, combine the mixed greens, avocado, red onion, and cilantro.
  5. Add the cooked shrimp to the salad.
  6. Drizzle the remaining dressing over the salad and toss gently to combine.
