Ingredients

  • Shrimp - 1 pound
  • Lime Juice - 1/4 cup
  • Orange Juice - 1/4 cup
  • Olive Oil - 2 tablespoons
  • Garlic - 2 cloves minced
  • Avocado - 2 ripe, diced
  • Mixed Greens - 4 cups
  • Red Onion - 1/4 cup thinly sliced
  • Grapefruit - 1 peeled and segmented
  • Orange - 1 peeled and segmented
  • Mint Leaves - 1/4 cup chopped

Instructions

  1. In a bowl, combine lime juice, orange juice, olive oil, and garlic. Season with salt and pepper.
  2. Add shrimp to the bowl and marinate for 15 minutes.
  3. Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes per side, until pink and cooked through.
  4. In a large bowl, combine mixed greens, red onion, avocado, grapefruit, orange, and mint leaves.
  5. Add the cooked shrimp to the salad.
  6. Drizzle the citrus dressing over the salad and toss gently to combine.
