Ingredients
- Shrimp - 1 pound
- Lime Juice - 1/4 cup
- Orange Juice - 1/4 cup
- Olive Oil - 2 tablespoons
- Garlic - 2 cloves minced
- Avocado - 2 ripe, diced
- Mixed Greens - 4 cups
- Red Onion - 1/4 cup thinly sliced
- Grapefruit - 1 peeled and segmented
- Orange - 1 peeled and segmented
- Mint Leaves - 1/4 cup chopped
Instructions
- In a bowl, combine lime juice, orange juice, olive oil, and garlic. Season with salt and pepper.
- Add shrimp to the bowl and marinate for 15 minutes.
- Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes per side, until pink and cooked through.
- In a large bowl, combine mixed greens, red onion, avocado, grapefruit, orange, and mint leaves.
- Add the cooked shrimp to the salad.
- Drizzle the citrus dressing over the salad and toss gently to combine.
