Ingredients

  • lean ground beef - 1 pound (90% lean)
  • uncooked whole wheat elbow macaroni - 8 ounces
  • reduced-sodium beef broth - 3 cups
  • fat-free milk - 3/4 cup
  • ketchup - 3 tablespoons
  • Montreal steak seasoning - 2 teaspoons
  • prepared mustard - 1 teaspoon
  • onion powder - 1/4 teaspoon
  • shredded reduced-fat cheddar cheese - 1 cup
  • Minced chives -

Instructions

  1. In a large skillet, cook the ground beef over medium heat for six to eight minutes, until it’s no longer pink, breaking it into crumbles. Drain off the excess liquid and fat.
  2. Stir in the uncooked macaroni, beef broth, milk, ketchup, Montreal steak seasoning, mustard and onion powder. Bring the mix to a boil, then reduce the heat and simmer, uncovered, for 10 to 15 minutes or until the macaroni is tender.
  3. Stir in the shredded cheese until it’s melted. Sprinkle the dish with chives before serving.
