Crispy egg rolls filled with shrimp, avocado, and cream cheese.

Ingredients
- Shrimp - 1 cup
- Avocado - 1
- Cream Cheese - 4 ounces
- Green Onions - 2
- Egg Roll Wrappers - 8
- Olive Oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
Instructions
- In a bowl, combine the shrimp, avocado, cream cheese, green onions, salt, and pepper.
- Lay an egg roll wrapper on a clean surface and place 2 tablespoons of the shrimp mixture in the center.
- Fold the bottom of the wrapper over the filling, then fold in the sides and roll tightly.
- Brush the tops of the egg rolls with olive oil.
- Preheat the air fryer to 400°F (200°C).
- Place the egg rolls in the air fryer basket and cook for 8-10 minutes, or until golden brown.
