Ingredients

  • Shrimp - 1 cup
  • Avocado - 1
  • Cream Cheese - 4 ounces
  • Green Onions - 2
  • Egg Roll Wrappers - 8
  • Olive Oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon

Instructions

  1. In a bowl, combine the shrimp, avocado, cream cheese, green onions, salt, and pepper.
  2. Lay an egg roll wrapper on a clean surface and place 2 tablespoons of the shrimp mixture in the center.
  3. Fold the bottom of the wrapper over the filling, then fold in the sides and roll tightly.
  4. Brush the tops of the egg rolls with olive oil.
  5. Preheat the air fryer to 400°F (200°C).
  6. Place the egg rolls in the air fryer basket and cook for 8-10 minutes, or until golden brown.
