Ingredients
- Shrimp - 1 pound
- Avocado - 2 ripe
- Egg Roll Wrappers - 12 sheets
- Soy Sauce - 2 tablespoons
- Rice Vinegar - 1 tablespoon
- Sesame Oil - 1 tablespoon
- Ginger - 1 teaspoon grated
- Garlic - 2 cloves minced
- Green Onions - 2 chopped
- Canola Oil - 2 tablespoons
Instructions
- In a medium bowl, combine the shrimp, avocado, soy sauce, rice vinegar, sesame oil, ginger, garlic, and green onions.
- Lay out an egg roll wrapper with one corner pointing towards you. Place about 1/4 cup of the shrimp mixture in the center of the wrapper.
- Fold the bottom corner up over the filling and tuck it under. Fold in the side corners and roll tightly to enclose the filling.
- Moisten the top corner with water and press to seal the egg roll.
- Lightly brush the egg rolls with canola oil.
- Preheat the air fryer to 375°F (190°C). Place the egg rolls in a single layer in the air fryer basket.
- Air fry for 10-12 minutes, turning halfway through, until the egg rolls are golden brown and crispy.
- Serve the shrimp avocado egg rolls with your favorite dipping sauce.
