Ingredients

  • Shrimp - 1 pound
  • Avocado - 2 ripe
  • Egg Roll Wrappers - 12 sheets
  • Soy Sauce - 2 tablespoons
  • Rice Vinegar - 1 tablespoon
  • Sesame Oil - 1 tablespoon
  • Ginger - 1 teaspoon grated
  • Garlic - 2 cloves minced
  • Green Onions - 2 chopped
  • Canola Oil - 2 tablespoons

Instructions

  1. In a medium bowl, combine the shrimp, avocado, soy sauce, rice vinegar, sesame oil, ginger, garlic, and green onions.
  2. Lay out an egg roll wrapper with one corner pointing towards you. Place about 1/4 cup of the shrimp mixture in the center of the wrapper.
  3. Fold the bottom corner up over the filling and tuck it under. Fold in the side corners and roll tightly to enclose the filling.
  4. Moisten the top corner with water and press to seal the egg roll.
  5. Lightly brush the egg rolls with canola oil.
  6. Preheat the air fryer to 375°F (190°C). Place the egg rolls in a single layer in the air fryer basket.
  7. Air fry for 10-12 minutes, turning halfway through, until the egg rolls are golden brown and crispy.
  8. Serve the shrimp avocado egg rolls with your favorite dipping sauce.
