Ingredients

  • beef broth - 2 cans (14-1/2 ounces each)
  • marinara sauce - 1 jar (24 ounces)
  • frozen mixed vegetables - 3 cups, thawed
  • navy beans - 1 can (15-1/2 ounces), rinsed and drained
  • frozen fully cooked Italian meatballs - 24 pieces, thawed
  • frozen chopped spinach - 5 ounces, thawed and squeezed dry (about ½ cup)
  • refrigerated cheese tortellini - 1 package (9 ounces)
  • Shredded Parmesan cheese -

Instructions

  1. In a Dutch oven, combine broth, marinara sauce and mixed vegetables.
  2. Bring to a boil; add beans, meatballs and spinach.
  3. Simmer, uncovered, for 5 minutes.
  4. Stir in tortellini; cook 7 minutes longer.
  5. Serve with Parmesan cheese.
