Ingredients

  • Flank steak - 6 oz
  • Mixed bell peppers - 2 cups sliced
  • Broccoli florets - 1 cup
  • Cauliflower rice - 1 cup
  • Coconut aminos - 2 tbsp
  • Sesame oil - 1 tbsp
  • Minced garlic - 1 tsp
  • Grated ginger - 1 tsp

Instructions

  1. Heat a non-stick skillet over medium heat, add a little sesame oil if desired, and sauté cauliflower rice for 5–7 minutes until tender; set aside.
  2. In a bowl, mix coconut aminos, garlic, and ginger; add sliced flank steak and marinate for 10 minutes.
  3. Heat a wok or large skillet over medium-high heat, add sesame oil, stir-fry marinated beef for 2–3 minutes until browned; remove and set aside.
  4. In the same wok, add sliced bell peppers and broccoli, stir-fry for 4–5 minutes until tender-crisp.
  5. Return beef to the wok, stir-fry everything together for 1–2 minutes to combine flavors.
  6. Serve hot over the sautéed cauliflower rice.
