Ingredients
- Flank steak - 6 oz
- Mixed bell peppers - 2 cups sliced
- Broccoli florets - 1 cup
- Cauliflower rice - 1 cup
- Coconut aminos - 2 tbsp
- Sesame oil - 1 tbsp
- Minced garlic - 1 tsp
- Grated ginger - 1 tsp
Instructions
- Heat a non-stick skillet over medium heat, add a little sesame oil if desired, and sauté cauliflower rice for 5–7 minutes until tender; set aside.
- In a bowl, mix coconut aminos, garlic, and ginger; add sliced flank steak and marinate for 10 minutes.
- Heat a wok or large skillet over medium-high heat, add sesame oil, stir-fry marinated beef for 2–3 minutes until browned; remove and set aside.
- In the same wok, add sliced bell peppers and broccoli, stir-fry for 4–5 minutes until tender-crisp.
- Return beef to the wok, stir-fry everything together for 1–2 minutes to combine flavors.
- Serve hot over the sautéed cauliflower rice.
