Ingredients

  • Chicken - 1 whole
  • Carrots - 2 large, chopped
  • Celery - 2 stalks, chopped
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Chicken Broth - 8 cups
  • Egg Noodles - 8 ounces
  • Bay Leaves - 2
  • Thyme - 1/2 teaspoon
  • Salt - to taste
  • Pepper - to taste

Instructions

  1. In a large pot, combine the chicken, carrots, celery, onion, garlic, bay leaves, thyme, salt, and pepper.
  2. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 20-30 minutes, until the chicken is cooked through.
  3. Remove the chicken from the pot and shred with two forks. Discard the bones and return the shredded chicken to the pot.
  4. Add the egg noodles and continue to simmer for another 10 minutes, until the noodles are cooked.
  5. Remove the bay leaves and season with additional salt and pepper if needed.
  6. Serve hot and enjoy!
