Ingredients
- Chicken - 1 whole
- Carrots - 2 large, chopped
- Celery - 2 stalks, chopped
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Chicken Broth - 8 cups
- Egg Noodles - 8 ounces
- Bay Leaves - 2
- Thyme - 1/2 teaspoon
- Salt - to taste
- Pepper - to taste
Instructions
- In a large pot, combine the chicken, carrots, celery, onion, garlic, bay leaves, thyme, salt, and pepper.
- Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 20-30 minutes, until the chicken is cooked through.
- Remove the chicken from the pot and shred with two forks. Discard the bones and return the shredded chicken to the pot.
- Add the egg noodles and continue to simmer for another 10 minutes, until the noodles are cooked.
- Remove the bay leaves and season with additional salt and pepper if needed.
- Serve hot and enjoy!
